Many of you out there are looking for ways to be healthier in 2016 and one way to do that is to avoid wheat and dairy and sneak more fruit and vegetables into your meals!
I found this amazing recipe (on Yummy Recipes) for oat muffins which I have adapted a little as I love to experiment in the kitchen!! Oo-er Missies! 😉
Crazy Courgette Breakfast Cakes are dairy, wheat and gluten free. They make a filling breakfast or snack and are full of goodness and nutrition.
The almond butter provides protein and minerals. The bananas are full of potassium and the Courgettes are low in fat, full of B vitamins, phosphorous, Vitamin C, Vitamin K and lots of other goodies. The almonds are full of protein to rebuild your muscles and also tons of vitamins! These oat cakes are a great way to sneak extra fruit and veg into your first meal of the day and give you plenty of sustainable energy throughout the day to keep you at peak performance! Ideal for Porn Stars, athletes and anyone who wants to keep going all day long! Forget stodgy Weetabix – this recipe really will give you more brain power and energy, although it probably won’t make you fly!
4 Table Spoons Of Almond Butter – I prefer Pip and Nuts Almond and Coconut butter
4 Table Spoons Of Honey
1 Teaspoon Of Almond Extract
4 Table Spoons of Crushed Almonds or desiccated coconut.
3 Medium Sized Bananas
2 small grated Courgettes
A large Splash on non dairy milk – ie coconut or almond milk
3 Small Cups Or Tumblers Of Rolled Oats
1 Teaspoon Of Baking Powder
1 Teaspoon of Cinnamon
2 Table Spoons Of Flaxseed Powder and 6 Table Spoons Of water
A large pinch of salt
Preheat Your oven to 200.
You’ll need a muffin tin which will hold at least 12 cakes.
Mix the flax seed and water in a cup or bowl. Stir and place aside for later.
Mix your almond butter and honey then heat gently in a pan on the hob until it’s mixed – set aside.
Mash up your bananas with a potato masher. Next add to the mashed bananas your grated courgettes, the almond extract, coconut milk, honey and almond butter mix, flax seed mix and your crushed almonds, cinnamon, oats and salt. Give it a good old stir so its mixed well.
Then simply spoon the mixture into your muffin tins and pop your scrumptious Porn Star Cakes into the oven for 25 minutes!
After 25 minutes leave to cool then enjoy the taste sensation that awaits you!
Eat them slowly, gobble them up or share with a friend!
